A New Look For Kea Lani’s Ko

The $5.1 million renovation of Ko, the signature restaurant at Fairmont Kea Lani, is under way

The $5.1 million renovation of Ko, the signature restaurant at Fairmont Kea Lani, is under way. The design of the new southwest Maui gathering place features sweeping curved walls, a floating shaded roof, a dynamic action bar, built-in seating banquettes and porcelain tile flooring. Each design element has been carefully selected to complement the innovative cuisine of the restaurant, which celebrates the many cultures of Hawaii’s sugar plantation era, from Hawaiian, Chinese and Filipino to Portuguese, Korean and Japanese. A Hawaii kitchen represents the ethnic composition of the island, said Ko’s executive chef Tylun Pang, who is devoted to the farm-to-table concept and who sources food directly from local farmers, fishermen and ranchers. The restaurant’s grand reopening is scheduled for February 2012. www.fairmont.com/kealani
