Earlier this year, Destination Hotels and Resorts launched its “The Study Of” culinary series, an in-depth exploration of seasonal ingredients and cooking techniques. During each phase of the series, hotel chefs choose a focus, add related dishes to their menus and share recipes online for home cooks.
Through December, “The Study Of” is focusing on braising, a French cooking method ideal for warming up the kitchen during winter. At the Royal Palms Resort and Spa in Phoenix, Chef Paul McCabe is offering braised endive, beef short ribs and country pork. At Hotel Derek in Houston, guests can sample Chef Shannen Tune’s braised pulled pork sandwich or maple braised collard greens, among others.
