Famed chef Richard Sandoval recently opened La Biblioteca de Tequila restaurant at Breathless Cabo San Lucas Resort & Spa. The Latin American menu offers both traditional dishes such as tacos and tableside guacamole as well as chef specialties, including seasonal enchiladas and coffee-rubbed carne asada. The restaurant is open to the public.
Guests can also enjoy a drink from the restaurant’s extensive beverage menu. As part of its library theme, La Biblioteca lets guests buy and “check out” a bottle of tequila, mezcal or sotol by storing it in one of the restaurant’s lockers for later use. Sandoval has two other La Biblioteca restaurants in New York City and Denver. The New York location hosts one of the biggest collections of tequila and agave spirits in North America.
The 169-suite adults-only Breathless Cabo San Lucas opened in late 2015 on Los Cabos’ Medano Beach.
