If your clients are interested in the catch of the day, they might want to head to Vail for new epicurean adventures offered by Fly Fishing Outfitters. The two-day, one-night excursions are ideal for fly-fishing enthusiasts as well as novices. Chef Kelly Liken, who has appeared on both “Top Chef” and “Iron Chef,” has partnered with Fly Fishing Outfitters to offer the Float, Fish and Feast trips.
Guests will be taken on a guided float trip and culinary expedition with Liken along the Colorado rivers while collectively taking in the wild habitat, scenic Rocky Mountains and canyons, together with world-class angling opportunities.
Excursions will be available to book for groups of up to six, based on availability throughout the season and with a four-week advance booking. Select Casting for the Cure trips will be exclusively dedicated to female breast cancer survivors who will be joining Liken for the float, including many women who have taken up fly fishing for the physical, emotional and spiritual rehabilitation benefits as part of post-treatment.
“These trips are not only bringing people closer to the origins of their food but enormously beneficial in many respects,” Liken said. “It is immensely fulfilling to be a part of such an incredible group of women, while also enjoying what I love to do most outside of the kitchen.”
Throughout the course of the float guests will make scheduled stops, including an afternoon lunch on the banks of the river. After a long day of angling, guests will retreat to the charming yet rustic hunting cabins to enjoy an exquisite three-course chef’s Rocky Mountain inspired dinner prepared by chef Liken featuring the cuisine and seasonal ingredients exclusively sourced from the state’s finest purveyors. The evening will allow guests to socialize over cocktails and appetizers and reflect on the activities of the afternoon.
Cocktails and appetizers will echo the techniques Liken has often used herself while on a camp cookout. Liken will cook dishes such as an heirloom tomato and Olathe sweet corn salad; signature potato crusted trout filet; seared Alaskan halibut with artichoke and fennel barigoule, parsley salsa verde, sourdough salad; fire-grilled elk loin with foraged Colorado mushrooms, roasted endive and arugula salad with red wine jus. Dishes will be paired with wines selected by husband and business partner, Rick Colomitz, who also acts as the wine director at Restaurant Kelly Liken. Guests will depart the following morning and travel along the Colorado Basin before an afternoon stop for a box lunch featuring an assortment of salads, charcuterie, smoked salmon, salumi and artisan cheeses, smoked and prepared by Liken along the banks of the Eagle River. The trip will culminate at the Colorado and Eagle River junction located in Dotsero, Colo.
