Hilton Waikoloa Village diners already enjoy the teahouse setting and tasty fare at Imari, home of Hawaii Island’s premier teppanyaki (iron griddle) dining. Now they can explore a new menu unveiled this month at the Japanese restaurant within the resort. Headlining the island-inspired culinary creations are innovative sushi rolls such as the volcanic eruption (spicy tuna, Kula onion and kaiware sprouts topped with a peppery roe) and green sand beach (ahi, hamachi, salmon and wasabi tobiko). Imari’s executive chef Charles Charbonneau and his team use farm-to-table ingredients wherever possible, from fresh island greens in the Imari salad to local apple bananas in the decadent tempura banana split.
