Vancouver's transformation into a culinary destination was assured this year when Food & Wine magazine listed the city on their "Top Ten Best Restaurant Cities in the World” list accompanied by such world-renowned dining destinations as New York City and Paris. Now, just before the city makes its Olympic debut, two more internationally acclaimed chefs have set up kitchens in Vancouver.
Manhattan chef Daniel Boulud, whose signature restaurant, Daniel, on Park Avenue in New York City was rated one of the best restaurants in the world, has opened a Vancouver version called DB Bistro Moderne.
Located in the heart of Kitsilano, guests can experience French cooking, New York haute cuisine and flavors of the Pacific Northwest in an uptown casual setting. Menus are seasonal and offer a variety of fare, from pasta to burgers to tarte flambee (to share). Reservations can be made online.

Also making an entrance on Vancouver’s rising culinary scene is chef Jean-Georges Vongerichten. The chef, whose name is behind an empire of retaurants that span the globe, from New York to Shanghai, has launched Market by Jean Georges in the new Shangri-La Hotel. Here, the culinary focus also revolves around seasonal, regional ingredients with a emphasis on fresh, local seafood. Market by Jean-Georges has been referred to as a destination restaurant, with four distinct dining experiences. The restaurant features an intimate and casual cafe with fireplace; a heated, covered outdoor terrace with city views; an enticing bar complete with raw bar; and a sophisticated fine-dining room featuring two private rooms, one seating 10 people and the other 12.
