Walk inside Lardo restaurant and you can’t miss the illuminated sign on the wall, a call to action: Pig Out. It’s hard not to obey orders. At his new eatery chef Rick Gencarelli, who earned a cult following at his now-closed food cart of the same name, serves his signature dishes and then some.
Named after a type of salume made by curing strips of fatback with herbs, Lardo bills itself as a modern sandwich shop and beer garden. The changing menu features favorites like the pork meatball banh mi, lamb meatball sub, crispy pig ear salad and Lardo fries with herbs and parmesan.
Out in Lardo's parking lot, meanwhile, the Sugar Cube -- one of Portland’s favorite dessert carts -- has found a permanent home. Lardo diners can walk over and top off their meal with a milkshake, fizz, sundae or ice cream sandwich made from original recipes, enhanced by Salt and Straw’s ice cream.
