12 Dining Experiences Onboard Oceania Vista, Including New Exclusive Options

As an upscale cruise line heavily focused on culinary experiences, Oceania Cruises is set to serve a plethora of dining options onboard its upcoming Vista, including returning favorites and two new exclusive options: Ember and Aquamar Kitchen.

“Vista will present a fresh perspective on the finest cuisine at sea with an astounding array of dining options that range from the informal to the extravagant,” said Bob Binder, president and CEO of Oceania Cruises, in a press release.

The following dozen venues are planned onboard Oceania Vista, which is set to launch in 2023.

Ember (New) 

Ember, a signature addition to Oceania’s favorite dining options, is a dining room that will be open for lunch and dinner, serving American cuisine. Dishes will include braised short ribs on polenta, grilled swordfish with asparagus, crab cakes with spicy aioli and a Cobb salad with smoked chicken.

Also new will be the health-focused Aquamar Kitchen for breakfast and lunch. Morning selections will encompass cold-pressed raw juices and superfood smoothies, hearty homemade granolas and avocado toasts, organic power bowls and breakfast wraps, followed by midday slow-roasted organic salmon with quinoa tabouleh and lemon tahini, yellowfin tacos with white cabbage slaw and a crunchy chicken sandwich on a freshly baked whole-grain bun.

The Grand Dining Room

The Grand Dining Room will be the main restaurant onboard, still featuring the cuisine of celebrity chef Jacques Pepin along with an Executive Chef’s Tasting Menu option. Daily offerings will extend to at least 10 appetizers, soups and salads and 10 dinner entrees, as well as healthy Aquamar Vitality Cuisine courses.

Polo

Specialty restaurant Polo will be reprised on Vista as a savory steakhouse complete with 28-day dry-aged, certified Black Angus USDA Prime beef, plus seafood dishes such as grilled swordfish and whole Maine lobster gratinee.

Toscana

Toscana will be another specialty restaurant repeated onboard for Italian cuisine, including recipes from the mothers and grandmothers of Oceania’s culinary staff. Clients can expect dishes such as octopus carpaccio with champagne vinaigrette, artichoke-and–parmesan-cheese timbale with black truffle sauce, hand-rolled gnocchi with pesto, risotto with lobster medallions and shallots and a pan-seared sea bass filet finished with Sorrento lemon, chardonnay and capers.

Red Ginger

Another Oceania favorite carrying over to Vista is Red Ginger. The pan-Asian restaurant will plate a blend of Thai, Korean, Japanese and Malaysian dishes, such as a salad of spicy roast duck and watermelon with cashews, mint and Thai basil; a Malaysian beef penang with coconut rice and paratha roti; and Thai vegetable curry with sweet potatoes, eggplant, mushrooms and basil in green curry sauce.

Terrace Cafe

Terrace Cafe will be an informal dining experience available throughout the day, inside or al fresco. Breakfasts will include made-to-order eggs, omelets, pancakes and waffles. Lunches will encompass roasted and rotisserie meats as well as pizza. And dinner will serve grilled-to-order lobster tails, fish, filets and steaks; hand-cut sushi and sashimi; and Chef’s Market Dinners of locally inspired specialties.

Waves Grill

Waves Grill will offer all-American favorites near Terrace Cafe and the swimming pool at lunch and into the afternoon. Fare here will showcase gourmet burgers, seafood and sandwiches from an open galley.

The Culinary Center

The Culinary Center will serve as an interactive stage for the ship’s Chef Instructors. Guests will be able to learn as well as dine at the Culinary Center Dining Room, which is good for private group dining or special food and wine pairings.

Privee

Privee will again be a space dedicated to privacy, exclusive to up to 10 diners.

Baristas and Bakery

Rounding out Vista’s culinary options will be Baristas and Bakery. Baristas will brew Illy espresso, cappuccinos and lattes, and Bakery will craft French and Italian pastries.
