Food-Forward Appellation Healdsburg Resort Opens in California

Appellation Healdsburg has officially opened  as the flagship property of the culinary-focused hospitality brand Appellation, co-founded by Michelin-starred chef Charlie Palmer and hospitality executive Christopher Hunsberger. The 108-room resort spans eight and a half acres in Healdsburg, California.

The property features two signature Charlie Palmer restaurants: Folia Bar & Kitchen in the Main House and Andys Beeline Rooftop. Folia centers on live oak ember cooking under chef de cuisine Reed Palmer, a Healdsburg native whose background includes Blue Hill at Stone Barns, Copenhagen's Amass and three-Michelin-starred SingleThread. The rooftop venue offers panoramic vineyard views and coastal bar cuisine with garden-infused cocktails.

"Appellation Healdsburg signifies a major milestone for our brand as the first hotel we've conceived and created entirely from the ground up," said Christopher Hunsberger, co-founder and chief operating officer of Appellation. The resort includes the Terroir Spa with five treatment rooms; two pools, including the Foss Pool with day-use cabanas and the Serenity Pool; and an indoor-outdoor fitness studio. Guestrooms and suites range from 325 to 1,160 square feet, featuring floor-to-ceiling doors opening to balconies and patios with vineyard or pool views.

Designed by architect John Hill and EDG Design, the property incorporates mature native trees, culinary gardens and gathering spaces connected by winding paths across two neighborhoods. The lobby functions as a residential-style entertainment space with chef-led tastings and demonstrations.

The resort's Crafted at Appellation program offers more than 50 annual hands-on workshops led by local artisans, farmers and hotel staff, covering activities from cheesemaking to botanical cocktail creation. Classes take place in dedicated rooms equipped with farmhouse sinks and audiovisual support.

Event facilities include 11 venues totaling more than 15,000 square feet of indoor-outdoor space. The centerpiece is The Grange, featuring an exhibition kitchen and connecting to The Lawn, which can accommodate up to 500 guests with vineyard views.
