Suncadia offers winter packages

Suncadia, a new year-round mountain resort community, has quickly become a recreational playground for Seattleites and travelers across the Pacific Northwest. Now the 6,400-acre destination -- located 90 minutes east of Seattle -- is helping clients celebrate the holiday season stress-free with three all-inclusive holiday party packages, allowing groups and businesses of all sizes to host memorable holiday gatherings and reward employees for an excellent year. From luxurious cozy guestrooms to seasonally-inspired cuisine, Suncadia provides a welcome retreat from the hustle and bustle of daily life and offers guests the opportunity to celebrate the holiday season in style.

“Our snow-covered landscape creates an ideal location for wintertime activities such as dog sledding, cross-country skiing, ice skating and snowshoeing. The toasty fireplaces lit throughout the grand Lodge create a warm retreat where any group can create memories to last beyond the holidays,” said Gregg Harper, general manager of resort operations at Suncadia.

The Suncadia Traditions Package features a plated dinner with:

• Pumpkin and Dungeness Crab Bisque or Mixed Winter Greens with endive, goat cheese, hazelnuts, pomegranate and roasted shallot vinaigrette

• Berkshire Pork Loin Chop with Caribbean spices and apricot- golden raisin chutney or
Garlic Grilled Ribeye with rosemary, shallots, and merlot demi glace or
Pan Seared Chicken Breast with lemon and thyme and natural chicken jus lie or
Potlatch Roasted Salmon Filet with classic beurre monte

• Yule Log with berry coulis


The Evergreen Elegance package features a reception followed by a plated dinner with:

Reception

• Seared Sea Scallops with warm peppered bacon mustard vinaigrette on a rosemary skewer

• Sautéed Wild Mushrooms en croute with parmesan on toasted brioche

• Crisp Vegetable Crudités accompanied by dipping sauce

• International Artisan Cheese and Cured Meats with assorted chutney and crackers

Plated Dinner

• Pumpkin and Dungeness Crab Bisque or Mixed Winter Greens with endive, goat cheese, hazelnuts, pomegranate and roasted shallot vinaigrette

• Mint Marinated Lamb Loin Chops with eggplant caponata or
Peppercorn Crusted Washington Beef Tenderloin with Syrah demi glace or
Petite Cornish Game Hen brined in garlic and thyme or
Ancho Rubbed Salmon Steak roasted on a seasoned cedar plank

• Yule Log with berry coulis or Pumpkin Spice Cheesecake

The Cascade Celebrations package features a reception followed by a buffet dinner with:

• Tomato and Fresh Mozzarella Bruschetta

• Spicy Grilled Prawns with tomato, pineapple and cilantro relish

• International Artisan Cheese and Cured Meats with assorted chutney and crackers

Buffet

• Frisee and Winter Green Salad with caramelized pears, gorgonzola, spiced walnuts and red wine shallot vinaigrette

• Haricot Vert, Pomegranate and Toasted Almond Salad

• Prime Rib roasted with rosemary, garlic and sea salt, accompanied by horseradish, grain mustard and cabernet demi glace, carved to order

• Maple-Mustard Chicken Breast

• Native-Spiced Salmon Filets with harvest grain and dried apricot pilaf

• Honey Glazed Carrots and Asparagus

• Braised Brussel Sprouts with pancetta and mustard cream sauce

• Scalloped Potatoes au Gratin

• Warm Pear and Craisin Crisp topped with fresh whipped cream

• Pecan Tartlets

Offered November through February, holiday party packages start at $199 per person, including lodging and dinner, exclusive of taxes, resort fees and gratuities. The three tiers of dinner packages can be selected ala carte with Suncadia Traditions at $50 per person, Evergreen Elegance at $65 per person, and Cascade Celebrations at $80 per person, with a minimum of 50 people. All packages include one glass of wine or non-alcohol beverage.

Guests who book a Holiday Party Package before Oct. 31, 2008 will receive a 30-minute complimentary full host bar. Holiday Party Packages hosted between Monday and Thursday will receive a ten- percent discount off food and beverages (866-928-9105, www.suncadia.com).
