An Inside Look at Explora Journeys’ Fine-Dining Concept
Explora Journeys’ culinary strategy includes fine dining at Anthology, a new Chef Invite series and more.

Explora Journeys is a relatively new luxury cruise line — corporate cousin to MSC Cruises — but its fleet of ships is already expanding, now including Explora I and Explora II.

And standout cuisine has been a hallmark of the brand since day one. Case in point: The ships’ only extra-charge restaurant, Anthology, has moved away from a regular rotation of featured Michelin-starred chefs and prix fixe menus to a fresh Italian concept (beginning at 140 euros per person, with an optional wine pairing priced at an additional 60 euros per person). It’s also set to showcase international culinary talent with its Chef Invite Series, which features guest chefs helming one-off dining experiences.

We discussed both — and the overarching approach to onboard food — with Franck Garanger, head of culinary for the line.

For those who are not aware, how would you describe Explora’s overall culinary approach, with respect to how it differs from other luxury lines?

At Explora Journeys, our culinary approach is built around authenticity, quality and variety. We believe in creating meaningful dining experiences that reflect diverse global flavors by curating menus inspired by each destination we visit, and by sourcing the highest-quality ingredients.

What sets us apart from other luxury lines is our focus on crafting dishes that are more personalized, and less formalized. Each venue is designed to offer unique experiences — from Mediterranean to Pan-Asian cuisines, using the freshest ingredients, sourced responsibly. Additionally, we focus on immersive dining, where guests can connect with the culture and story behind the dishes they enjoy.

What was the idea behind offering only specialty (but complimentary) dining venues with the exception of one, Anthology?

The decision to have all dining venues as specialty but complimentary has been very well-received by our guests. It allows them to explore a variety of gourmet options without the concern of additional charges.

Anthology, our fine-dining venue, provides something unique — a chance to experience an exclusive menu celebrating the most iconic dishes of Italy. The fact that Anthology has a nominal extra charge and is limited to 30 guests per evening is also understood by our guests, because it offers a one-of-a-kind gastronomic experience, often with bespoke wine pairings and tailored dishes that are unlike anything else onboard.

How is the culinary program evolving based on customer feedback?

Our culinary program is evolving based on guest feedback and our ongoing commitment to innovation. Guests have consistently expressed an appreciation for both variety and authenticity, and we’re further enhancing that by deepening our focus on locally inspired menus that reflect the destinations we visit.

We are also expanding our plant-based and sustainable dining options to meet growing preferences for healthier, eco-conscious meals. Our culinary teams are constantly fine-tuning their offerings to elevate both taste and presentation, based on the insights we gather from our discerning guests.

When I was on Explora I, Emma Bengtsson was the featured rotational chef, and the meal was the best I’ve ever had at sea. How do the new Invite series and Italian menu now fit in?

I’m delighted that you enjoyed your experience with Emma Bengtsson.

Each Invite dinner is hosted in Anthology, which offers the ideal ambiance for these intimate, exclusive dining events. While seating is limited to ensure a refined experience, guests on all other journeys can enjoy Anthology's revised concept of fine Italian cuisine — a seven-course grand tasting menu created by me that represents a beautiful culinary journey through Italy.

An “anthology” is defined as a collection of selected cultural works of art. True to its name, our Anthology restaurant tells the story of Italy’s culinary brilliance through a creative expression of culture, heritage and passion.

From the renowned flavors of Piedmont’s truffle-rich countryside in the North to the famed specialties of Italy’s South, the menu is an ingenious display of creativity — each dish celebrating the finest local ingredients and time-honored techniques and tastes of every region in Italy.

Will each new ship copy the preceding dining venues, or can clients expect to see any variation from ship to ship?

While there is a consistency in the quality and philosophy of our culinary program across all ships, there will be subtle variations in the dining experiences between ships. Each vessel may incorporate certain regional specialties, or evolve certain concepts to better suit its itinerary and clientele.

For instance, from Explora I to Explora II, we’ve refined some of our menus to better align with guest feedback and preferences. We’re always improving and adapting to ensure each ship offers a fresh and exciting experience, even for repeat guests.

What else do you foresee for the culinary future of Explora as the fleet continues to grow?

As the Explora Journeys fleet grows, we envision an even greater focus on sustainable and immersive culinary journeys. We are working on new collaborations with local chefs from the regions we sail through, offering guests a taste of authentic, regionally inspired cuisine.

Additionally, we plan to deepen our focus on wellness dining, with a broader selection of plant-based and health-conscious menus. We are also exploring the idea of more interactive culinary experiences, such as guest participation in cooking classes with visiting chefs or farm-to-table excursions.
