After a half-hour of patiently waiting in a long line outside of Biscuit Head, I had scoured the menu and memorized my brunch order, feeling confident that a line this long for a Cathead biscuit would be worth it.
The comforting smell of butter and flour mixed with the sweet smell of every kind of jam imaginable inside the small, Asheville, N.C., locale said it all: I was in for a modern take on a uniquely Southern treat. I ordered the Mimosa Fried Chicken Biscuit for the promise of another Southern classic sandwiched between a classic all its own.
Cathead biscuits are named for their size (that of a cat’s head). This would be true — if Biscuit Head’s biscuits weren’t the size of a small dog’s head. The rich, flaky biscuit warmed my bones just as fast as it crumbled and melted in my mouth. The chicken was crispy on the outside and moist in the middle. Sweet-potato butter and a poached egg crowned the masterpiece, and spicy slaw provided a break from the richness.
I left feeling bloated but satisfied and sleepy in the way only a biscuit sandwich the size of a chihuahua can leave you. Biscuit Head is the place to be when your only plans for the day include brunching or lunching.
